I started my 30 day challenge for a plant-based diet 7 days ago, with my husband. and a few friend, here on Facebook. I was a vegetarian in college but my diet consisted of pizza bagels and mac & cheese and that was after reading and seeing the abuse to animals BUT that’s not the driving reason to me, its my health and the health of my family.

Best part of making the change this week is cutting my grocery bills MORE then by half. Watching my kids try new foods, eat less meat/animal products and feeling better. My husband dropped 5 lbs the first week, I dropped 4. i need to eat more good carbs and try more foods to find my balance. He is very happy with 5 lbs loss. We both notice less inflammation for sure! And we both tried to explain to each other there is a sharper? clearer?quicker? energy less cloudy in the head. So excited to see what week 2 brings.
Been doing research, What is plant-based? What’s the difference between plant based and vegan? What are the benefits and what to expect? Been trying to use organic ingredients, eating more raw veggies and true new foods. I tried a portabella mushroom at a restaurant last night and I liked it, going to buy one this week and find a recipe.

My family have been feeling run down and with coughs so i am trying oil of oregano, a few drops in the back of the throat and a water chaser. Food is medicine I will try it first and oregano oil is a natural antibiotic

Today I de-clutter, take a break from social media, clean and prep. Making my first quinoa chili in the crockpot. I’m thankful my friends Gail & Rami stopped by with amazing organic veggies from their garden. I will bring you some chili xoxo
Some of my favorites food and meals this week. Greek chickpea cucumber tomato salad, potato?s and peppers and jalapeno, organic bean, and corn salsa Sweet potatos with coconut cream, maple syrup and pineapple.
