Simple & Inexpensive Plant Based Gluten Free Stuffed Sweet Butternut Squash Recipe

Since being plant based and intermittent fasting for so long, there is really no “breakfast” food I eat instead I break fast with leftovers or a REAL food protein shake. At 40 yrs old I woke up began to learn to eat clean, intermittent fast and more recently exploring and loving my plant based lifestyle. Now at 47 years old, lost close to 50 lbs and always looking for better health, I highly suggest intermittent fasting and plant based for weight lose and wellness. Simple Eating and Living Keeping it simple during quarantine, over the summer and heading into the Fall I am always looking for easy, inexpensive creative gluten free, organic and plant based recipes that I experiment with ingredients in my cabinet. Butternut Squash is a staple for me, and have been exploring different recipes.


My Butter Nutty Recipe

1 1/2 cup crushed favorite nuts, I prefer to use cashews or pecans

1 cup cranberry, raisin, blueberry DRY FRUIT BLEND

1 heaping tablespoon on Earth's Balance,

salt, pepper, ORGANIC CINNAMON and ORGANIC MAPLE SYRUP per taste.
